Quick Healthy Snack
A quick healthy snack for you and/or the little family: it’s a hummus, avocado, beans and tomato on a toast!
- toast (1 brown or multi grain bread)
- garlic hummus (1 tbsp)
- avocado (1 tbsp)
- sautéed cherry tomatoes (3 or 4)
- sautéed garbanzo beans (about 1-2 tablespoons)
- sprinkle of parsley
- dash of sea salt and pepper

Oatmeal Yummy Bars
I have a pot luck party coming up and everyone will taste my new yummy yogurt bars recipe. It’s so delicious and healthy for you.
Oatmeal Yummy Yogurt Bars
3/4 cup firmly packed brown sugar
1 (8-ounce) yogurt (vanilla or fruit flavored)
1 egg, lightly beaten
2 Tbsp vegetable oil
2 Tbsp milk
2 tsp vanilla
1 1/2 cups all-purpose flour
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp salt
3 cups oats
1 cup add-ins (diced dried fruit, raisins, cranberries, chocolate chips)
1. Heat oven to 350 degrees.
2. In a large bowl, combine brown sugar, yogurt, egg, oil, milk, and vanilla; mix well. In medium bowl, combine flour, baking soda, cinnamon and salt; mix well. Add to yogurt mixture; mix well. Stir in oats and add-ins of your choice (I used cranberries and chocolate chips; 1/2 cup of each).
3. Spread dough onto bottom of ungreased 9×13 baking pan.
4. Bake 28-30 minutes or until light golden brown. Cool completely on wire rack. Or cut into them as soon as they don’t burn your fingers when you touch them.
5. Store tightly covered.
Makes about 24 yummy bars.

Smoothie Day
This healthy, flavorful smoothie takes advantage of two wonderful seasonal ingredients in the Pacific Northwest- kale, and strawberries. Although it is not the time of year to eat local strawberries…you can buy them at the grocerie store. I’ve decided to mix the strawberries in this smoothie with kale for a boost of nutrients, and a bit of earthy flavor. I used curly kale, but any kind will do. What a fantastic way to start the day!
Strawberry Kale Smoothie
- 1 cup strawberries
- 1/2 banana
- 1 cup kale, packed, stems removed
- 1 cup cubed ice
- 1 scoop neutral flavored protein powder (I use Vega)
- 1 tsp maca powder
- 1 cup almond milk
Blend all ingredients thoroughly in a blender. And then enjoy this yummy smoothie! (via eatingwell)
