Coconut Yogurt

This homemade recipe is so easy and delicious- a great dessert or snack for your day as well!
**Coconut Yogurt**
3 thai coconuts- meat only
1 cup fresh thai coconut water
1-2 probiotic capsules or 1/2 t loose probiotic powder

Blend these ingredients in the blender until very smooth. Store in clean glass containers and let sit on the counter for at least 4 hours or overnight. Make sure to cover the yogurt while it’s fermenting with a piece of cheesecloth or paper napkin so it allows the yogurt to breathe. Store in the fridge for up to 3 days- but let’s be real, it won’t last that long because its too darn yummy! Cheers.

**Chocolate Coconut Yogurt**
1 cup coconut yogurt
1 date
1 T raw cacao

I love the chocolate version of this coconut yogurt- Simply divide the coconut yogurt recipe and add a date and raw cacao- so simple and crazy delicious. Recipe inspired by raw food recipes.

Today’s lunch! Kale, spinach, and sprouts, with lentils, chickpeas, roasted zucchini and yellow squash (olive oil, thyme, oregano, basil, salt and pepper), roasted sweet potato (olive oil, rosemary, thyme, garlic, shallots, salt and pepper) toasted pumpkin seeds, and avocado (!!) with lemon juice.

Hmmmmmm!!

Delicious Green Juice

A before & after of another delicious green juice! This green variation was:

AAAGREEN1

– 2 lemons
– 2 kiwis
– 6 stalks celery
– 1/2 pinapple
– 1 bunch of kale 
– lil bit of ginger & parsley

Mix everything in a blender or juicer.
