Meatless Monday is about making every effort to eat more veggies just one day a week. Take a look at my delicious lunchtime meal for the day and hope to inspire some of you.
I had the transformer at Fresh Restaurant on Eglinton avenue East. It is a salad full of goodies such as quinoa, avocado, cashew scallion paté, sikil pak, marinated tofu cubes and adzuki beans, chick peas, edamame, cucumber, heirloom grape tomatoes, lettuce and raw green wrap with carrot miso dressing.
